Don’t Miss the EFMP Holiday Party at Camp Pendleton

Now that Thanksgiving is over and the leftovers are gone, it's time to start thinking about the next holiday on the calendar. Between shopping for gifts and lighting the tree, take some time to attend the EFMP Holiday Party at Camp Pendleton on Saturday, December 2.

At the event, each family will be able to take a picture with Santa, enjoy some food and drinks while listening to music, create a craft, receive a toy for each child attending. Registration is limited, so secure your spot to make sure that you get to attend this festive, fun-filled event right here at home.

Blue Cheese Stuffed Burger

Blue Cheese Stuffed Burger

Ingredients:
1/2 cup finely chopped onion
1 pound of ground beef
3 tablespoons dry breadcrumbs
2 tablespoons water
1 egg white, lightly beaten
1/4 cup (1 ounce) crumbled blue cheese
1/4 cup fat-free sour cream
4 (1-ounce) English muffins, toasted
4 lettuce leaves
4 (1/4-inch-thick) slices tomato

Instructions:
Coat a small nonstick skillet with cooking spray; place over medium heat until hot. Add onion; saute 5 minutes or until tender. Remove from heat; let cool. Combine onion, beef, breadcrumbs, water, and egg white in a large bowl; stir well. Divide mixture into 8 equal portions, shaping into 1/2-inch-thick patties. Spoon 1 tablespoon cheese into the center of 4 patties; top with remaining patties. Press edges together to seal.

Prepare grill. Place patties on grill rack coated with cooking spray; grill 4 minutes on each side or until done.

Spread 1 tablespoon sour cream over top half of each muffin, and set aside. Line bottom halves of muffins with lettuce leaves; top each with a tomato slice, a patty, and top half of muffin.

Sausage & Cheese Egg Puff

Ingredients:

4 large sliced mushrooms

1 tablespoon butter

1/2 cup all-purpose flour

4 cups shredded monterey jack cheese

1 cup crumbled pork or turkey sausage (fully cooked & drained)

2 cups shredded cheddar cheese

4 chopped green onions

1/2 cup butter

10 eggs, lightly beaten

Instructions:

In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.

In same skillet brown and crumble the sausage. Drain well on paper towels.

In a large bowl, combine the flour, baking powder and salt.

In another bowl, combine eggs and cheeses.

Melt remaining butter; add to egg mixture. Stir into dry ingredients along with sausage crumbles and mushroom mixture.

Fill greased muffin cups three-fourths full.

Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean.

Carefully run a knife around the edge of each muffin cup before removing.
